Queso de Flor is a highly prized variety that owes its exceptional quality to its curdling with the thistle flower (Cynara cardunculus and Cynara scolymus). Produced in the Altos de Gáldar and the northern midlands of Gran Canaria, it is a treasure of Canary Island gastronomy. The climate; its completely artisanal production; the mixture of milk from Canary Island breeds of sheep, cow and goat; the types of rennet (vegetable and animal); the maturing process in caves and the feeding of the livestock, rich in aromatic grasses from endemic plants, give the product unique nuances of aromas and flavours that are unique in the world.
